Chefs (Mascot) (Bayside Council)

Position Overview Little Birria wishes to recruit 2x Chefs to lead and manage our quick‑paced kitchen, oversee food preparation, maintain quality and presentation, and supervise kitchen staff. This is a full‑time position based in Mascot NSW with a salary range of $77,000 to $85,000 plus superannuation. Responsibilities
- Prepare signature dishes as per patron’s preferences and dietary requirements.
- Oversee the kitchen team, providing directions on food preparation and presentation, and quality of the dishes.
- Trial current formations and combinations to inspire and attract patrons to Mexican cuisine.
- Select choice ingredients to optimise flavours, aroma and nutritive value.
- Regulate food quantity orders, oversee stock levels and minimise wastage.
- Maintain knowledge of Mexican cooking trends and latest industry concepts to create menu variations for competitive edge.
- Provide delightful dishes that ensure the best dining experience for patrons.
- Receive feedback and suggestions, and resolve complaints if any.
- Direct and oversee best practices and hygiene compliance in the kitchen.
- Educate and mentor junior cooking staff and kitchen staff.
- Personnel management, rosters and leave planning and staff performance reviews. Qualifications and Experience Applicants should ideally have a Diploma plus Certificate IV in Cookery, or at least 3 years of proven industry experience. At least 1 year of experience will be highly regarded. Must demonstrate sound culinary knowledge, leadership skills and problem‑solving skills in a fast‑paced kitchen environment. Required experience: Supervisors of food preparation and serving workers.
