Chef de Partie - Positions Available (Brisbane)

The Lodge Bar & Dining is a premium dining destination, delivering elevated hospitality through exceptional food, warm service and a refined guest experience. We are currently seeking two talented Chef de Partie professionals to join our kitchen team and play a key role in delivering an exceptional culinary experience. Working closely with the Head Chef, you will be hands-on in service, contribute to menu execution, and take ownership of your section while working with premium produce in a quick-paced, high-performing kitchen. Full Time – Chef de Partie (Grill Section) We are seeking an experienced grill chef with a strong understanding of premium meat preparation and fire-based cooking. Key responsibilities include:
- Managing the grill section with confidence and consistency
- Extensive grill experience, including woodfire cooking
- Preparation of premium proteins, including meat preparation and fish breakdown
- Maintaining section readiness through mise en place and service preparation
- Ordering, stock rotation and minimising wastage
- Maintaining exceptional food quality, consistency and presentation standards Full Time – Chef de Partie (Vegetable Section) This role is ideal for a strong Chef de Partie or experienced Demi Chef ready to continue developing within a premium kitchen environment. Key responsibilities include:
- Running a high-volume, fast-paced vegetable section
- Managing the section with support and mentorship from the Head Chef
- Preparation, ordering and stock rotation
- Maintaining consistency, pace and attention to detail during service
- Contributing to a collaborative and high-performing kitchen culture What We're Looking For
- Certificate III in Commercial Cookery (or equivalent)
- Minimum 2 years’ experience in a similar role
- Experience within premium dining, elevated casual or high-quality hospitality venues
- Strong understanding of food safety and kitchen compliance
- Excellent communication and teamwork skills
- The ability to thrive in a fast-paced, evolving environment
