Description
We are seeking an experienced and trade-qualified Chef to lead/support our kitchen operations. The successful candidate will ensure the highest standards of food preparation, kitchen hygiene, and team coordination. This is a full-time, ongoing position with long-term career stability. Key Responsibilities:
- Menu & Dish Creation: Planning, designing, and pricing innovative menus and daily specials, ensuring food cost targets are met.
- Food Preparation & Cooking: Preparing, seasoning, and cooking high-quality dishes, including signature sauces, meats, seafood, and dietary-specific meals.
- Kitchen Management: Monitoring and ordering kitchen supplies, managing inventory, and estimating food and labor requirements.
- Quality & Consistency: Ensuring all dishes leave the kitchen meeting the restaurant’s strict standards for taste, presentation, and temperature.
- Hygiene & Safety: Enforcement of strict health, safety, and sanitation standards in accordance with Australian Food Safety regulations.
- Team Leadership: Supervising, training, and mentoring kitchen staff, apprentices, and commis chefs, coordinating kitchen shifts efficiently.
- Equipment Maintenance: Discussing food preparation issues with managers, and checking the quality of raw and cooked food products, ensuring all equipment is operating correctly. Skills and Experience Required:
- Qualifications: An Australian AQF Diploma or Certificate IV in Commercial Cookery (or equivalent international qualification).
- Experience: A minimum of 3 years of post-qualification full time experience working as a Chef in a fast-paced commercial environment.
- Technical Skills: Proficient in high-volume food production, stock rotation, kitchen management systems, and menu costing.
- Interpersonal Skills: Exceptional communication, time management, leadership abilities, and a strong work ethic.
- Availability: Ability to work a rotating roster, including nights, weekends, and public holidays. Benefits:
