Scope of the Role The Chef is responsible for overseeing all aspects of kitchen operations including menu planning, food preparation, staff supervision, and maintaining food quality and safety standards. The role also involves contributing to menu innovation, ensuring efficient kitchen workflow, and sourcing quality ingredients aligned with the café’s brand. Key Responsibilities
- Plan, develop and update menu items for the café, with a strong focus on high-quality brunch dishes, specialty desserts, and modern café cuisine, ensuring alignment with customer preferences and seasonal availability.
- Estimate food and labour costs and assist in maintaining budgetary control, including portion control, waste minimisation, and efficient use of ingredients.
- Order, receive, and inspect food supplies to ensure quality, freshness, and compliance with supplier standards.
- Prepare and cook a full range of menu items, including desserts, pastries, and savoury café dishes, ensuring consistency in taste, quality, and presentation.
- Determine cooking methods, preparation procedures, and portion sizes to maintain consistency and efficiency across all menu offerings.
- Monitor and control cooking processes, including regulating temperatures of ovens, grills, and other kitchen equipment to ensure optimal cooking results.
- Oversee all stages of food preparation and presentation to ensure dishes meet the café’s quality and presentation standards before service.
- Supervise, train, and coordinate kitchen staff, providing guidance on cooking techniques, food safety practices, and workflow efficiency.
- Ensure compliance with all food safety and hygiene regulations, including HACCP standards, and enforce safe food handling practices within the kitchen.
- Maintain a clean, organised, and protected kitchen environment in accordance with workplace health and safety requirements.
- Coordinate kitchen operations during service periods to ensure timely preparation and delivery of meals.
- Contribute to continuous improvement of menu offerings by analysing customer feedback and current food trends, particularly in café and dessert segments.
- Work collaboratively with management to support business growth, operational efficiency, and a high standard of customer experience. Hours of Work This is a full-time role requiring a minimum of 38 hours per week. Work hours may include weekends, evenings, and public holidays depending on operational requirements. Qualifications and Experience
- Relevant Diploma qualification in Commercial Cookery or related field.
- Minimum of 1 year of relevant work experience as a Chef.
- Experience in menu planning, costing, and kitchen operations.
- Strong knowledge of café-style cuisine and dessert preparation. Skills and Attributes
