Job Description We are seeking an experienced and creative Head Pastry Chef to lead our pastry operations across the hotel, including restaurant service and high‑volume banqueting. This is a key leadership role for a passionate pastry qualified who thrives in a fast‑paced, high‑standard environment and takes pride in delivering outstanding desserts and baked creations at scale. Working closely with the Executive Chef and culinary leadership team, you will oversee all pastry production for Coco’s Kitchen + Bar, in‑room dining, and a wide range of conferences, weddings, and special events. You will play a central role in shaping the hotel’s pastry offering while mentoring and developing your team. Key Responsibilities
- Lead all pastry production across restaurant, banquets, and events
- Design and execute cutting-edge dessert menus and seasonal creations
- Ensure consistent five‑star quality in presentation and execution
- Manage ordering, stock control, and food cost within the pastry section
- Lead, mentor, and develop the pastry team to build a strong kitchen culture
- Maintain strict compliance with food safety, hygiene, and HACCP standards
- Collaborate with the wider culinary team to ensure smooth service delivery Qualifications
- Trade qualifications in Commercial Cookery or Patisserie
- Proven experience in a senior pastry role within a hotel, resort, or high‑volume kitchen
- Strong leadership and team development skills
- Experience across both à la carte and large‑scale banqueting service
- Solid organisational and time management skills in a busy environment
- Sound knowledge of food safety and kitchen compliance standards
- Creative approach with a passion for innovation and presentation
