Task & responsibilities Prepare and produce a wide range of artisan pastries, viennoiserie, desserts, cakes, and sweet baked goods to a consistently high standard. Manage laminating, mixing, proofing, shaping, baking, decorating, and finishing processes across pastry production. Follow established recipes, techniques, and production schedules while maintaining quality, presentation, and consistency. Ensure compliance with food safety, hygiene, and HACCP requirements within all areas of pastry production. Monitor stock levels and assist with ordering pastry ingredients, fillings, chocolate, and other baking supplies. Assist in training and mentoring junior pastry team members while fostering a positive kitchen setting. Contribute to seasonal menu development and the creation of innovative pastry and dessert offerings aligned with the brand.
Qualification & experience Minimum 2 years of full‑time experience as a Pastry Cook, Pastry Chef, or similar role within a commercial bakery, patisserie, or artisan pastry environment. Relevant Certificate III or higher qualification in Patisserie, Cake & Pastry, or equivalent industry experience. Strong knowledge of pastry production techniques including laminating, dessert preparation, chocolate work, and viennoiserie production. Ability to work efficiently in a quick‑paced, high‑volume artisan kitchen environment while maintaining exceptional attention to detail. Flexibility to work early mornings, weekends, and public holidays as required by production demands. Robust commitment to food safety, cleanliness, and HACCP compliance standards.
