- $87,409 per annum plus 17% superannuation Terms: Full time, Continuing Position Overview University House offers commercial hotel and graduate student accommodation, and 15 diverse events spaces and hospitality venues. University House is reopening in mid‐**** after 6.5 years closure due to the **** Canberra hailstorm, and a complete refurbishment to restore and upgrade its rooms and facilities. The reopening, in conjunction with the University's 80th anniversary, presents an exciting chance to re‐establish and grow the reputation and business of University House and its contributions to the University. The Sous Chef acts as second in command, stepping in for the Head Chef when required to maintain standards and continuity of service within the University House, which houses the Hotel, Restaurant, Bar & Café on the Australian National University Campus. Responsibilities Support the Executive Chef and Head Chef in leading day‐to‐day kitchen operations across a high‐volume commercial environment. Act as second in command and lead the kitchen during the Head Chef's absence. Oversee mise en place planning, production schedules and pass checks. Ensure consistent execution, portion control and presentation across all menu items. Contribute to seasonal menus, recipe development and staff training. Maintain standards and continuity of service. Qualifications Proven experience in a Sous Chef or senior kitchen leadership role. Strong people management and communication skills. Sound knowledge of food safety, compliance and cost control. Calm, organised and confident under pressure. Strong understanding and application of HACCP and Workplace Health and Safety. Commitment to continuous improvement and high attention to detail.
