- Prepare and produce a wide range of artisan pastries, viennoiserie, desserts, cakes, and sweet baked goods to a consistently high standard.
- Manage laminating, mixing, proofing, shaping, baking, decorating, and finishing processes across pastry production.
- Follow established recipes, techniques, and production schedules while maintaining quality, presentation, and consistency.
- Ensure compliance with food safety, hygiene, and HACCP requirements within all areas of pastry production.
- Monitor stock levels and assist with ordering pastry ingredients, fillings, chocolate, and other baking supplies.
- Assist in training and mentoring junior pastry team members while fostering a positive kitchen environment.
- Contribute to seasonal menu development and the creation of innovative pastry and dessert offerings aligned with the brand. Qualification & experience
- Minimum 2 years of full‑time experience as a Pastry Cook, Pastry Chef, or similar role within a commercial bakery, patisserie, or artisan pastry environment.
- Relevant Certificate III or higher qualification in Patisserie, Cake & Pastry, or equivalent industry experience.
- Strong knowledge of pastry production techniques including laminating, dessert preparation, chocolate work, and viennoiserie production.
- Ability to work efficiently in a quick‑paced, high‑volume artisan kitchen setting while maintaining exceptional attention to detail.
- Flexibility to work early mornings, weekends, and public holidays as required by production demands.
- Solid commitment to food safety, cleanliness, and HACCP compliance standards.
