We are looking for a passionate, skilled, and hands-on Sous Chef to play a key role in this journey. About the Role: As Sous Chef, you will work closely with the Executive Chef to deliver exceptional dining experiences, ensuring the highest standards in banquets, restaurant service and in-room dining. You will lead from the front, overseeing daily kitchen operations, inspiring your team, and bringing innovative ideas to the table. - Support the Executive Chef in the overall management and operation of the kitchen.
- Lead kitchen operations in the absence of the Executive Chef.
- Supervise and coordinate all kitchen sections to ensure smooth and efficient service.
- Maintain consistent food quality, presentation, and portion control across all dishes.
- Train, mentor, and develop junior chefs and apprentices.
- Assist with menu development, specials, and seasonal menu planning.
- Monitor stock levels, ordering, and stock rotation to control food costs and minimise waste.
- Ensure full compliance with food safety, HACCP, and workplace health and safety standards.
- Maintain high standards of cleanliness, organisation, and discipline in the kitchen.
- Work collaboratively with front-of-house and management teams. About you:
- Trade qualified chef (Certificate III or IV in Commercial Cookery or equivalent).
- Minimum 4–6 years’ experience in a professional kitchen, with at least 2 years in a supervisory role.
- Proven experience in hotel, fine dining, or high-volume quality kitchens.
- Strong leadership and team management skills.
- Excellent knowledge of cooking techniques, kitchen operations, and food safety compliance.
- Strong organisational and time management skills.
- Ability to work under pressure in a fast-paced environment.
- Flexible availability, including weekends, evenings, and public holidays. About us:
