Position : Chefs
- Senior and Sous Position Type : Full Time Salary : from $76,000 for Sous and $85,000.00 senior chefs plus accommodation Location : Dooley's Springsure Tavern and Motel, Springsure, Central Queensland, Australia We are seeking a talented and experienced Chefs to join our team in our country Motel and Tavern. Dooleys Springsure is a busy Tavern, bistro plus we have 68 deluxe room hotel. We need your experience in our busy kitchen. Chefs will be required to support and lead the team to deliver the highest in quality in food. Tasks Required Include :
- Ensure food is prepared to a consistently high standard.
- Ensure all Food is produced within budget requirements.
- Ensure hygiene standards are maintained at a sufficiently high level and an approved food safety plan is implemented.
- Monitor and maintain all kitchen equipment in correct operating order.
- Handle all customer complaints and patron care as required in a courteous, friendly manner.
- Informing potential issues with kitchen staff/GM regarding the prep/ordering/stock control/food safety and quality
- Follow correct hygiene food handling practices and safety procedures.
- Ordering of products used with authorisation.
- Creation and Preparation of any menu items as required. Including creating and interesting Specials Board.
- Assist all kitchen staff and General Manager as required.
- Guide / train / ensure correct documentation of new and old staff members in accordance with food and health and safety procedures and guidelines.
- Responsible for running of all aspects of the kitchen including kitchen cost control including menu costing / control of all pricing margins to ensure the best Gross Profit / staff costs / ordering/ reconciliation of ordering/ monthly counting and recording of stock takes
- Demonstrate sound teamwork / organisational skills Requirements :
- At least 2 years' experience as a Chef
- Qualification in Cookery is highly regarded
- Certificate IV in Cookery or equivalent qualification required
- Experience in a high-volume commercial kitchen
- Experience in kitchen management is highly regarded
- Minimum 1-2 years of kitchen management experience required
- Knowledgeable in Kitchen and Food Safety Experience in working in a busy hotel kitchen is preferrable but not essential. We want someone to start as soon as possible and those with an Australian visa or residency are preferred but we will consider a visa sponsorship for the right qualified person.
