Waya Japanese Restaurant is a well-loved dining destination on Kingsway in Glen Waverley, celebrated for its authentic Japanese cuisine and warm, inviting atmosphere. From expertly crafted sashimi and sushi to comforting ramen and seasonal specials, we take pride in delivering fresh, high-quality food to our guests every day. As we continue to grow, we are looking for a passionate and motivated Chef to join our kitchen team. You will perform the following duties:
- Assist other chefs in the daily preparation and execution of all menu items to the restaurant's quality standards.
- Prepare and portion ingredients including fresh fish, meat, vegetables and sauces in accordance with established recipes and specifications.
- Maintain a clean, organised and safe workstation at all times, adhering to food safety and hygiene regulations.
- Support all sections of the kitchen including hot kitchen, cold preparation and sushi station as directed by senior chefs.
- Monitor stock levels, assist with stock rotation and minimise food wastage by following correct storage procedures, including proper chilling, labelling and preservation of Japanese specialty ingredients.
- Ensure consistent portion control and presentation standards that reflect Waya's commitment to quality and authenticity.
- Collaborate effectively with front-of-house and kitchen team members to ensure smooth, efficient service during peak periods.
- Actively participate in kitchen training, contribute ideas for seasonal menu development, and demonstrate a willingness to learn and grow within the team.
- Assist with monitoring dish quality at every stage from prep through to plating and promptly communicate any concerns regarding ingredients or techniques to senior kitchen staff. Requirements
- Minimum 1 year of full-time professional kitchen experience in a similar role.
- Genuine passion for Japanese cuisine and a desire to develop your skills in an authentic Japanese kitchen environment.
- Formal culinary qualifications are preferred (Certificate III or IV in Commercial Cookery, Diploma of Hospitality Management, etc.), candidates without formal qualifications but with substantial and demonstrable professional kitchen experience will also be considered.
- Strong understanding of food safety, hygiene and HACCP practices.
