Dosa Bite is a busy and well-loved Indian restaurant located in Liverpool NSW. We specialise in authentic South Indian cuisine, with a menu that covers dosas, idli, vada, biryanis, tandoor dishes, curries, and Indo-Chinese items. We serve breakfast, lunch, and dinner seven days a week and also cater for large functions and events.

The Role

We are looking for a skilled and experienced South Indian Chef to join our team on a full time basis. The focus of this role is on South Indian cooking — you must have strong, hands-on experience preparing dosas, idli, vada, chutneys, sambar, biryanis and curries. This is a hands-on kitchen role in a fast-paced, high-volume restaurant.

Key Responsibilities Prepare and cook South Indian dishes to a high standard, including the full range of dosas (plain, masala, ghee roast, 70mm, ravva, cheese series, and more), idli, vada, and accompaniments such as sambar and chutneys Prepare biryanis including Hyderabadi Dum style, and assist with tandoor and curry dishes as required Maintain consistent taste, quality, and presentation across all dishes Manage kitchen prep, everything in its place, and smooth service during busy periods Assist with catering and large function orders Follow all food safety, hygiene, and OH&S; standards Help with stock management and minimising wastage Work as part of a close-knit kitchen team and support junior staff

What You Must Have Mandatory qualification: Certificate III or IV in Commercial Cookery, or an equivalent qualification recognised in Australia Minimum 1 year of qualified experience cooking South Indian cuisine in a restaurant kitchen Solid, proven skills in dosa preparation — this is a core requirement of the role Solid knowledge of South Indian cooking techniques, spices, and ingredients (sambar, rasam, chutneys, idli/vada batters) Experience with biryani and North Indian curries is an advantage but not essential Current Food Handling Certificate (or willingness to obtain before starting) Ability to work a rotating roster including weekends and public holidays — we are open 10:00 AM to 10:00 PM, 7 days a week
