Description
We’re opening an exciting new Italian deli in Hamilton and are looking for a passionate, experienced Head Chef to lead our kitchen from day one. This is a hands-on leadership role suited to someone who lives and breathes Italian food culture, from artisan focaccia to premium cured meats and classic deli sandwiches. About the Role As Head Chef, you’ll be responsible for building and running an efficient, high-quality deli kitchen. You’ll take ownership of menu creation, kitchen systems, and team leadership while ensuring every product reflects authentic Italian flavour and craftsmanship. Key Responsibilities
- Lead daily kitchen operations with a focus on consistency, quality, and efficiency
- Develop and execute a seasonal deli menu including sandwiches, focaccia, and prepared foods
- Produce and oversee handmade focaccia, fillings, and house-made components
- Work with premium cured meats, cheeses, and traditional Italian ingredients
- Create recipes, build sheets, and standardised processes
- Develop and maintain Standard Operating Procedures (SOPs)
- Train, mentor, and manage a small kitchen team
- Manage ordering, supplier relationships, and inventory control
- Oversee rostering and labour management
- Ensure food safety, hygiene, and cleanliness standards are consistently met Skills & Experience
- Strong understanding of Italian cuisine and deli-style food preparation
- Proven experience as a Head Chef or Senior Sous Chef in a similar workplace
- Expertise in sandwich construction and artisan bread (especially focaccia)
- Experience working with cured meats and specialty cheeses
- Demonstrated ability in menu development and recipe creation
- Strong organisational and leadership skills
- Solid understanding of food cost control, wage management, and minimising waste
- Ability to build and lead a positive, high-performing team
