Our client’s website: The Sky Bakery and Patisserie About The Position On behalf of our client, The Trustee for J & T Le Nguyen Family Trust trading as The Sky Bakery and Patisserie, we are seeking a skilled Pastrycook with a relevant qualification and a minimum of three years’ relevant industry experience. Reporting To This role reports directly to the Owner. The typical job responsibilities will include, but are not limited to the following:
- Weighing up ingredients accurately for mixing doughs
- Preparing and baking pastry products
- Mixing, kneading, maturing, cutting, moulding, and shaping dough for various pastry products
- Creating fillings for cupcakes, pies, and other pastries by mixing and preparing ingredients
- Developing and suggesting new menu items, seasonal products, and custom orders for events and client requirements
- Decorating pastries and baked goods with icings, toppings, and creative designs to enhance visual appeal
- Checking the quality and condition of equipment, ensuring proper maintenance and cleanliness
- Ensuring the quality and use-by date of ingredients upon receipt
- Following recipes precisely and maintaining production records
- Monitoring and adjusting oven temperatures to ensure consistent baking results
- Ensuring all production and finishing tasks complied with HACCP and food safety standards
- Demonstrating secure work practices and promoting a strong commitment to health and safety
- Training and supervising junior pastry cooks on production techniques and standards Applicants must meet the following minimum requirements to be considered for the role:
- A relevant Certificate IV
- A minimum of 3 years of relevant experience
- Strong team player with the ability to work collaboratively in a fast-paced kitchen environment.
- Adaptability to learn and adjust to changes in baking techniques and recipes.
- Effective communication skills to coordinate with the kitchen staff and other team members.
- Capacity to take full responsibility for baking tasks and be answerable for outcomes.
- Positive and proactive work attitude, especially when faced with challenges.
- Dedication to self-improvement, keeping up with baking trends, and willingness to share knowledge with colleagues.
- Strong passion for the art of food design.
- Excellent organisational and time management skills.
- Good customer service skills, particularly if interacting with customers directly (e.g. special event orders such as Christmas, Easter, Mother’s Day, etc.)
- Attention to detail and creativity in all baking and cooking tasks to ensure quality products.
- In-depth knowledge of sanitation principles.
- Applicable knowledge of baking with ingredient limitations (pastries that are gluten-free, sugarless, etc.).
