We are seeking a talented, passionate, and driven Sous Chef to stand side-by-side with our Head Chef. This is a hands-on role where you will be part of a close-knit kitchen team. Key Responsibilities:
- Menu Collaboration: Contribute to a dynamic menu driven by low-waste principles, utilizing unique cuts, preservation techniques, and seasonal gluts.
- Service Excellence: Cooking with precision, ensuring consistency, beautiful presentation, and high standards during busy service periods.
- Operations & Compliance: Maintain immaculate food safety, hygiene, stock control aligned with our minimal-waste ethos. What We’re Looking For
- Experience: Proven experience as a Junior Sous Chef or experienced CDP in a high-quality, fast-paced restaurant environment.
- Alignment of Values: A genuine passion for sustainability, ethical sourcing, and minimal-waste kitchen practices. Experience with whole-animal butchery, foraging, or fermentation is a massive plus.
- Team Work: A calm, cooperative, and communicative individual who prefers mentoring over shouting.
- Technical Skill: Sharp culinary skills with a strong eye for detail and a love for working with open flame/hibachi elements and fresh, raw ingredients.
