About the role The Archer Hotel, a historic and busy pub in the heart of North Adelaide, is seeking an experienced and passionate Chef to join our kitchen team. You will be responsible for leading daily kitchen operations, creating menus that reflect seasonal ingredients and customer preferences, and ensuring high-quality, consistent food delivery. Key responsibilities:
- Design and plan menus in line with customer preferences and seasonal ingredients.
- Oversee daily food preparation and ensure consistent quality across all dishes.
- Manage and train kitchen staff, including chefs, cooks, and support personnel.
- Order ingredients and supplies, negotiate with vendors, and manage inventory levels.
- Monitor food costs, waste, and profitability to meet budget targets.
- Ensure full compliance with food safety and sanitation standards.
- Develop and maintain staff rosters, ensuring proper coverage for service periods.
- Collaborate with front-of-house staff to ensure smooth and timely service.
- Plan and execute special events or themed menus as required.
- Maintain cleanliness, organisation, and safety of the kitchen environment. Selection criteria (essential)
- Certificate IV in Commercial Cookery or higher (or equivalent relevant experience).
- At least 1 years of full-time experience as a Chef.
- Strong knowledge of up-to-date Australian pub cuisine and seasonal produce.
- Ability to control food costs, rostering, and inventory.
- Leadership skills with experience training kitchen teams.
- Solid understanding of HACCP and food safety regulations. Desirable
- Experience working in a high-volume pub, bistro, or hotel kitchen.
