After more than a year of bringing 1 Hotel Melbourne to life, our kitchen brigade continues to evolve—and we’re now looking for a Banquet Sous Chef to join the team. The Role As Banquet Sous Chef, you’ll work alongside the Executive Banquet Chef to lead a hands-on team, delivering elevated, seasonal menus at scale—without ever compromising on quality. You’ll be instrumental in shaping both the culinary experience and the culture of the kitchen. What You’ll Do
- Deliver restaurant-quality food across all banquet operations—ensuring excellence in taste, presentation, and consistency
- Lead from the front during service, setting the standard through craft and attention to detail
- Coach and develop a growing team of chefs, fostering a positive, collaborative environment
- Maintain exceptional standards in food safety, organisation, and kitchen operations
- Support cost control across food and labour while driving productivity and efficiency
- Champion a culture where people feel valued, supported, and able to thrive both inside and outside of work What You Bring
- Experience as a Sous Chef or Senior Chef in a premium hotel, events, or restaurant workplace
- A passion for ingredient-led cooking and quality over volume
- Strong leadership skills with a genuine focus on team development and wellbeing
- A hands-on, solutions-focused mindset and the ability to perform under pressure
