As a Sous Chef working in our premium dining department, you will support the culinary team in delivering an excellent standard of food quality and presentation. - Oversee daily culinary operations within our premium dining setting, ensuring high‑volume production meets quality standards for events and daily service
- Support food safety plans and maintain HACCP accreditation standards, advocating for on‑site compliance across kitchens
- Assist in managing departmental budgets, controlling food costs, and coordinating with suppliers to source high‑quality ingredients for premium dining menus
- Collaborate with the Head Chef and General Manager on menu development, addressing guest feedback and resolving service‑related issues More About You
- Diploma in Professional Cookery Level 5 or equivalent, and minimum Certificate III in Commercial Cookery
- Food Safety Supervisor Certificate (desirable)
- Previous experience working in a premium dining environment, ideally within high‑volume or event‑driven operations
- Minimum of 3 years’ experience monitoring food and labour costs, menu development, and costing
- Proven background in ordering and inventory procedures, including cost controls and invoice handling
- Proficiency in menu development and stock management
