Position title: Chef de Partie Employer: Campofilone Pty Ltd (trading as Amatrice Restaurant) Location: Cremorne VIC 3121 Employment type: Full time, Permanent Salary: $78,000 – $80,000 per annum + superannuation About Amatrice Restaurant Amatrice Rooftop Restaurant is a slick Italian restaurant with city skyline views. The restaurant boasts some of Melbourne’s best views across the MCG to the CBD, with a glasshouse conservatory for all-season dining. Amatrice is a full-service restaurant located in Cremorne, Melbourne, offering an elevated dining experience inspired by the Amatrice region of Lazio. Our kitchen team is dedicated to crafting seasonal, produce-driven menus with authentic technique and modern precision. We are currently seeking an experienced Chef to join our brigade in a full-time, permanent capacity. The creation of two Melbourne restaurateurs – Dave Parker (San Telmo, Pastuso, Palermo, Asado, Robata
- 1 Hat, Neptune Food & Wine) and Alex Brawn (Valuable Food Guide-listed sea-side diner Sebastian). Amatrice is the first in a planned group of Mediterranean venues by the duo. About the role Reporting to the Head Chef, you will take responsibility for a designated section of the kitchen, contributing to the day-to-day production of food and the smooth, efficient running of kitchen operations. This is a full-time, ongoing position. Key responsibilities
- Preparing and producing dishes to the highest standards of quality, presentation and service timing
- Taking ownership of your section — managing mise en place, stock levels and storage procedures
- Monitoring deliveries for quality, quantity and freshness; rejecting items not meeting agreed standards
- Maintaining and enforcing kitchen hygiene, sanitation and safety procedures in accordance with HACCP requirements
- Assisting the Head Chef in controlling food costs, minimising wastage and damage
- Assisting with regular stocktakes and accurately recording breakages, wastage or complimentary items
- Mentoring and supporting junior kitchen staff, including setting performance expectations and conducting work reviews
- Contributing ideas to menu development in collaboration with the broader kitchen team
- Adhering to equipment maintenance schedules and reporting any required repairs to management
- Handling customer enquiries in a professional and helpful manner where required Skills and qualifications required
- Certificate IV in Commercial Cookery / Kitchen Management or equivalent overseas qualification'
- Minimum 3 years of experience working as a Chef in a full-service restaurant environment
- Demonstrated ability to work efficiently under pressure in a fast-paced kitchen
- Strong understanding of food safety, HACCP principles and allergen management
- Experience in stock control, ordering and waste minimisation
- Proven ability to supervise and mentor junior kitchen staff
- Excellent communication skills and a team-oriented approach
- Knowledge of Italian cuisine and fine dining presentation standards is highly regarded What we offer
