About the Role We are seeking a qualified and experienced Chef to take responsibility for the overall kitchen operations, including menu planning, food preparation, cost control, and supervision of kitchen staff. The role requires a high level of technical cooking skills, leadership capability, and the ability to manage a fast-paced commercial kitchen setting while maintaining consistent food quality and safety standards. (1) Menu Planning & Cost Control
- Plan, design, and cost menus in accordance with seasonal availability and customer preferences
- Estimate food and labour costs and manage kitchen budgets to achieve profitability targets
- Develop new menu items and continuously improve existing offerings based on market trends
- Ensure portion control and minimise food wastage (2) Food Preparation & Quality Control
- Prepare and cook a wide range of dishes to a consistently high standard
- Ensure presentation, taste, and portion sizes meet business standards
- Monitor food quality at all stages of preparation and service
- Maintain consistency across all menu items (3) Kitchen Operations Management
- Manage and coordinate kitchen operations during service periods, including running the pass
- Ensure efficient workflow and timely food service
- Oversee daily kitchen activities to maintain operational efficiency
- Implement systems to improve kitchen productivity (4) Staff Supervision & Training
- Supervise, train, and mentor kitchen staff, including junior chefs and kitchen hands
- Allocate duties and monitor staff performance
- Ensure staff compliance with workplace policies and procedures
- Foster a positive and productive team environment (5) Procurement & Inventory Control
- Order food supplies and manage relationships with suppliers
- Monitor stock levels and ensure proper stock rotation
- Inspect deliveries and ensure quality and compliance with standards
- Control inventory to reduce waste and manage costs (6) Food Safety & Compliance
- Ensure compliance with food safety regulations, including HACCP standards
- Maintain cleanliness and hygiene standards in accordance with legislation
- Conduct regular checks to ensure safe food handling practices
- Ensure compliance with workplace health and safety requirements Skills & Experience
- At least 3 years of relevant experience as a Chef in a commercial kitchen
- Certificate IV in Commercial Cookery or equivalent qualification
- Strong knowledge of modern cooking techniques and kitchen operations
- Proven experience in supervising or leading kitchen staff
- Experience in menu planning and cost control
