The Apollo has been one of Sydney's most loved Greek restaurants for over a decade. Whole lambs on the spit, saganaki that gets ordered at every table, a wine list that takes Greece seriously. We're after an Assistant Restaurant Manager to run the floor alongside our RM and help lead a team that genuinely cares about hospitality.

What You'll Actually Do Lead FOH through service, set the tone, hold the standard Be the person guests remember and the one your team looks to when it gets busy Support rostering, training, stock and compliance Help drive the hundred small things that keep a restaurant of this size moving

What we're looking for At least 2 years as an Assistant Restaurant Manager (or robust 2IC) in a comparable venue — high volume, quality-driven, full table service Solid wine knowledge and a genuine interest in food Confident training and developing FOH staff Calm under pressure, holds a room without raising their voice RSA essential Greek or Mediterranean experience a bonus, not a requirement
