Assistant Restaurant Manager | The Apollo (Bullatale)

Overview The Apollo has been one of Sydney's most loved Greek restaurants for over a decade. Whole lambs on the spit, saganaki that gets ordered at every table, a wine list that takes Greece seriously. We're after an Assistant Restaurant Manager to run the floor alongside our RM and help lead a team that genuinely cares about hospitality. What You'll Actually Do
- Lead FOH through service, set the tone, hold the standard
- Be the person guests remember and the one your team looks to when it gets busy
- Support rostering, training, stock and compliance
- Help drive the hundred small things that keep a restaurant of this size moving What we're looking for
- At least 2 years as an Assistant Restaurant Manager (or strong 2IC) in a comparable venue — high volume, quality-driven, full table service
- Solid wine knowledge and a genuine interest in food
- Confident training and developing FOH staff
- Calm under pressure, holds a room without raising their voice
- RSA essential
- Greek or Mediterranean experience a bonus, not a requirement What we offer
