This role oversees Atmos at Shoal Bay Country Club, an authentic waterfront Greek restaurant overlooking Shoal Bay, a major new Asian dining concept launching in 2026, and Nonna Bizzarro at The Exchange Hotel Newcastle, a vibrant Italian restaurant known for its energy, atmosphere, and strong local following. From long lunches overlooking the water to fast paced dinner service and the excitement of a major new opening, this is an prospect to lead venues with personality, strong guest connection, and real momentum, within a hospitality group continuing to invest heavily in growth, people, and new experiences. About the Company Zenith Hotels is a growing hospitality group behind some of NSW’s most loved coastal and regional venues, spanning restaurants, pubs, entertainment, and accommodation across the state. With continued investment into venue growth, redevelopment, and new openings, the group is focused on creating venues people genuinely want to spend time in. The Role Reporting to the Group General Manager, you’ll lead restaurant operations across the portfolio, driving performance, standards, leadership capability, and commercial outcomes. What You’ll Own
- End-to-end operational performance across the restaurant portfolio
- Consistency in service standards and exceptional guest experience across three restaurants
- Financial performance: labour, revenue, and overall profitability
- Leadership development, training, and operational accountability
