Bogan Biltong Pty Ltd is a family owned, local manufacturer of premium biltong and dried meat products. As we continue to grow, we are seeking an experienced and motivated Butcher / Knife Hand to join our production team, in Darwin NT.

This is a hands-on role suited to someone with strong meat preparation skills, a commitment to food safety, and a genuine interest in helping develop and improve high-quality meat products.

About the Role: Working as part of our production team, you will be responsible for preparing beef and other raw materials for our range of premium products. You will play a key role in maintaining product quality, consistency, and food safety standards while contributing ideas to enhance our existing product line.

Key Responsibilities: -Breaking down and preparing beef cuts for production. -Trimming, slicing, and portioning meat to specification. -High standards of product quality and presentation. -Following food safety, hygiene, and workplace safety procedures. -Assisting with the development and improvement of products and processes. -Operating and maintaining knives and meat preparation equipment. -Supporting general production and packing activities as required. -Maintaining a clean and organised work environment.

About You: Essential Requirements -Demonstrated experience as a butcher, knife hand, meat processor, chef, cook, or similar role involving extensive meat preparation. -Strong knife skills and confidence working with beef products. -Commitment to food safety, quality, and hygiene standards. -Reliable, motivated, and able to work independently and as part of a team. -Physically fit and capable of standing for extended periods. -Ability to safely lift and move boxes of meat weighing up to 20kg. -Robust attention to detail and pride in workmanship. Highly Regarded: -Experience in sausage making -Experience in food manufacturing or commercial meat processing -HACCP or food safety training. -Interest in product development and continuous improvement.
