The Position

:

Lead all kitchen operations for breakfast, crib & dinner service providing buffet/ bulk cooking options Manage & mentor a team of chefs, kitchen hands & dining room staff Oversee stock control, ordering & food safety compliance Ensure food is always prepared to a high standard Ensure OH&S; compliance, adhering to safe work practices & procedures. Ensure all catering controls are in place, & wastage is kept to a minimum. Maintain high standards of food hygiene, safety, infection control & cleanliness in accordance with Compass standards. Enhance workplace culture – display high levels of customer service, contribute ideas & be flexible to meet the needs of the business.

The Person: Cert III in Commercial Cookery
- Minimum Must be reliable, strong & capable of leading a team Proven experience as a head chef or sous chef in mining or remote settings Excellent communication & leadership skills Experience within bulk catering/ cooking environments Excellent knowledge of all kitchen procedures & operations Experience in menu writing, stock control, budgets, rostering, staff mentoring, training & liaising with the client. Experience with hygienic work practices and appropriate HACCP guidelines A proactive leader who is professional, positive, supportive, & motivated with experience in training, and developing a team of hospitality professionals
