Description Position Description Position Title: Pastry Chef / Baker Definition of Role: The Cake Decorating Preparation Baker will be responsible for the management of weighing and Mixing all the various icings, creams, glazes, syrups and sundry decorations such as blended nuts, shaved chocolate etc. that will be required for the days production. The employee will be responsible for recording all the correct ingredient batch codes onto the recipe sheets as well as the correct internal batch codes used on the trace sheets for items made during the production day. The Employee will also engage in all decoration work carried out by the decoration team once ingredients are prepared or as and when it is required for efficiencies. The employee will report directly to the Decoration Supervisor and indirectly to the Operations manager. Job Type: Full-time permeant Location: Homebush Cakes, unit 10, 1-15 Wentworth Rd Nth, Homebush NSW 2140 Supervisor: Decoration Supervisor Internal Business partners: Bakers, QA team, De-tining team, Cake Decorators and Operations Management, Wash bay sanitisation team, Warehousing Main Duties & Responsibilities
· Managing the preparation of all recipes that are required for the Cake Decorators during the production day. Work instructions must be adhered to following correct mixing time and maximum temperatures. This is essential in order to prevent quality issues arising from icing blooming.
· The production day will begin with preparation of any gluten free (GF) ingredients, this includes GF ganache, icings, glazes, shavings etc
· Recording all the correct batch codes onto the recipes and trace sheets, this is critical to product traceability
· Managing all work in progress (WIP) which is stored for use on a subsequent production day ensuring all WIP is correctly batched, wrapped, stored and discarded when past its protected use by.
· As a semi-autonomous role where the employee shall work independently early in the morning. The employee will be responsible to follow a schedule of work as directed by the decoration supervisor. This is to ensure that when the rest of the team begin their shift, the ingredients prepared in the morning match the workflow planned for the day
· As the first employee to start within the decoration team, it will be their responsibility to prepare the workstation for the first scheduled jobs. This will include any equipment, utensils and packaging materials required. The expectation will be that when the other team members arrive, work can begin at the station immediately Skills Required:
· Excellent attention to detail
· Organised and ability to meet production deadlines
· Accurate recording of paperwork
· Excellent icing mixing capabilities
· Cake Decoration skills, Masking, flooding, icing, piping etc. Key Performance indicators
· No downtime due to cake decorating ingredients not prepared to the production schedule
· No time delays at start up
