Balmain Bread is seeking an experienced Baker to join our production team in Balmain.
The successful applicant will be responsible for preparing, producing, baking, decorating, and finishing a range of bread, rolls, pastries, cakes, and other flour-based products in accordance with recipes, production schedules, and quality standards.
Key Responsibilities
- The successful applicant will be responsible for:
- Preparing and producing bread, rolls, pastries, cakes, and other flour-based products according to business recipes and production requirements.
- Measuring, mixing, kneading, moulding, shaping, cutting, and proving doughs and mixtures using appropriate techniques and equipment.
- Operating commercial ovens, mixers, proofers, dough sheeters, moulders, and other bakery equipment safely and efficiently.
- Monitoring baking times, oven temperatures, product colour, texture, volume, and overall quality during the baking process.
- Preparing fillings, icings, glazes, toppings, and decorations for pastry and cake products.
- Decorating, finishing, and presenting products to meet Balmain Bread’s quality and presentation standards.
- Checking the quality of raw ingredients and finished products to ensure freshness, consistency, and compliance with food safety requirements.
- Planning daily production requirements in consultation with management to ensure sufficient quantities are produced on time.
- Maintaining a clean, hygienic, and organised production area in accordance with food safety and workplace health and safety procedures.
- Storing ingredients and finished products correctly to maintain quality and reduce wastage.
- Assisting with stock rotation, inventory control, and ordering of ingredients where required.
- Training and guiding junior staff or assistants in baking techniques, equipment use, hygiene, and workplace procedures.
Requirements Applicants must have:
- Relevant qualification in baking, bread production, pastry production, commercial cookery, patisserie, food production, or a closely related field; or equivalent industry experience.
- At least 2–3 years of hands-on experience in a commercial bakery or flour-based product production environment.
- Strong knowledge of dough preparation, fermentation, proving, shaping, baking, and finishing techniques.
- Experience producing bread, rolls, pastries, cakes, and similar products in a commercial environment.
- Ability to follow recipes, production schedules, quality standards, and workplace procedures accurately.
- Good understanding of food safety, hygiene, and workplace health and safety requirements.
- Ability to work early mornings, weekends, public holidays, and flexible shifts as required.
- Solid attention to detail, reliability, honesty, and commitment to producing high-quality products.
- Ability to work independently and as part of a fast-paced team.
