Employer: Dulce Bakehouse Location: Delahey, Melbourne, VIC Employment type: Full-time, permanent (38 hours per week) Salary: $80,000 – $85,000 per annum + superannuation (commensurate with experience) Occupation (ANZSCO): Pastrycook (351112) About Us We are an established South American bakery in Melbourne, specialising in traditional Latin American pastries, breads and desserts. Our menu draws on regional baking traditions from across South America — from alfajores and medialunas, empanadas, tres leches and dulce de leche-based pastries. We are a busy, growing business with a loyal local following and a passion for authentic Latin American baking. The Role We are seeking an experienced Pastry Chef to join our kitchen team and take a hands-on role in our daily pastry production. You will be responsible for preparing our full range of South American pastries and desserts to a consistently high standard, contributing to menu development, and helping maintain the authenticity and quality our customers expect. Key Responsibilities
- Prepare and bake a full range of South American pastries, breads and desserts daily
- Develop and refine recipes for traditional Latin American items, including dulce de leche fillings, choux-based pastries, laminated doughs and regional cakes
- Manage mise en place, production schedules and stock levels for the pastry section
- Maintain consistent quality, presentation and portion control across all products
- Train and mentor junior kitchen staff
- Ensure compliance with food safety, HACCP and workplace health & safety standards
- Liaise with suppliers and assist with ordering of specialty ingredients
- Contribute to seasonal menu planning and recent product development Requirements
- Formal qualification in patisserie, baking or commercial cookery (Certificate III/IV or equivalent)
- Minimum 3 years' experience as a Pastry Chef in a commercial bakery or patisserie environment
- Demonstrated experience with South American or Latin American pastry traditions and techniques
- Minimum 3 years' experience specifically working with South American pastry traditions and techniques
- Working knowledge of traditional ingredients such as dulce de leche, manjar, guava paste, and regional flours
- Ability to work early morning shifts and weekends as required
- Strong attention to detail and consistency under volume
- Current Food Safety Supervisor certification (or willingness to obtain)
- Food Safety Supervisor certification can be obtained after commencement of employment
- Working rights in Australia, OR willingness to be considered for sponsorship if no suitable Australian candidate is found
