About the Role

We are seeking a highly organised and operationally focused Cellar Manager to join our Food & Beverage team. This role is critical to ensuring the seamless operation of our cellar and beverage systems, supporting multiple bar outlets through effective stock management, quality control and compliance.

Reporting to the Food & Beverage Manager, you will be responsible for maintaining cellar standards, ensuring product quality, and driving efficiency across all beverage operations.

Key Responsibilities

Oversee the day-to-day operation of the cellar to ensure all bars are fully stocked and service-ready

Maintain a clean, organised and safe cellar and loading dock workplace

Perform scheduled cleaning of beer systems, including beer lines, kegs and taps

Monitor and maintain gas systems, refrigeration and post-mix equipment

Manage stock levels, ordering and deliveries with approved suppliers

Reconcile invoices and manage discrepancies in a timely manner

Conduct and support monthly stocktakes, including variance investigation and reporting

Ensure appropriate stock rotation and minimise wastage

Maintain bar glassware standards and ensure adequate stock across all outlets

Ensure compliance with liquor licensing and WHS requirements

Liaise with suppliers and coordinate equipment servicing and maintenance

About You

Proven experience in a cellar, bar operations or beverage-focused role

Strong understanding of draught beer systems and cellar operations

Demonstrated experience in stock control, ordering and inventory management

High attention to detail with strong organisational skills

Sound knowledge of WHS practices and safe manual handling

Ability to work autonomously and manage competing priorities

Strong communication and stakeholder engagement skills

Versatile availability, including weekends and evenings as required

Ability to work a 7-day rotating roster including weekend work.

Excellent written and verbal communication skills
