Bartender / Waitstaff – Duty List
Before Service (Opening Duties) Set up the bar station: restock spirits, garnishes, mixers, bitters, and ice. Check all bar tools: shakers, strainers, pourers, jiggers, bar mats. Polish and arrange glassware. Prepare garnishes (lemon/lime wedges, mint, chilli, etc.). Refill water bottles, jugs, and table condiments. Set tables: cutlery, napkins, water glasses, menus. Check POS is working and cash drawer is accurate. Ensure fridges are fully stocked (beer, wine, soft drinks). Clean bar top, counters, and service area. Brief with manager/chef on specials, menu updates, 86’d items, or expected bookings.
During Service (Customer Service) Greet guests immediately and seat them if required. Take orders accurately and input into POS. Recommend drinks, explain menu items, and upsell where appropriate. Serve water promptly and refill when needed. Check on guests regularly without being intrusive. Handle complaints professionally and notify manager if needed.
Bartending Prepare cocktails, mocktails, and other beverages consistently. Maintain speed while ensuring drink quality and presentation. Keep bar area clean and organised at all times. Restock ice, garnishes, glasses, and mixers throughout service. Serve wine correctly (opening, pouring, presenting bottle). Ensure RSA compliance at all times — no service to intoxicated guests.
Waitstaff Duties Run food from kitchen to tables promptly. Explicit empty plates, glasses, and cutlery. Maintain table cleanliness (wipe, reset). Prepare takeaway orders, check accuracy before packing. Assist with Uber Eats / DoorDash pickups when required.
End of Service (Closing Duties) Clean the bar: wipe counters, restock fridges, refill garnishes for next day. Wash and polish all glassware. Empty bins and replace liners.Clean coffee machine (if applicable), beer taps, and soda guns. Cash up and close POS correctly. Sweep and mop the bar and dining area. Switch off lights, equipment, fridges (only if approved), and secure the venue. Complete handover notes for next shift.
General Responsibilities Maintain excellent personal hygiene and grooming. Communicate clearly with kitchen and floor staff. Follow all food safety and alcohol service regulations. Keep qualified, calm, and attentive under pressure. Always represent the restaurant’s brand and guest experience standards.
