TASFAM COFFEE CONCEPTS PTY LTD operates a growing coffee and crepe retail business, including a fixed café location and multiple mobile coffee and crepe trailers trading at festivals, community events, markets, corporate functions and special event days across Melbourne and surrounding areas. We are seeking an experienced Retail Operations Manager to oversee the day-to-day retail operations of our café and mobile trailer outlets, manage staff and stock, coordinate event-based trading, and ensure consistent product quality, customer service and compliance across all trading locations. About the Role This is a hands‑on retail management position responsible for organising and controlling the operations of our retail coffee and crepe business. The successful candidate will manage both our fixed café and mobile trailer operations, including event preparation, stock control, staff rostering, retail pricing, service standards, sales performance and operational compliance. The role requires someone who can manage a fast‑paced retail food environment, coordinate multiple mobile trading units, and ensure each outlet is ready to operate efficiently at scheduled events. Key Duties and Responsibilities The Retail Operations Manager will be responsible for:
- Managing the daily retail operations of the fixed café and mobile coffee/crepe trailers.
- Determining product mix, menu offerings, stock levels and customer service standards across all trading outlets.
- Planning and coordinating mobile trailer operations for festivals, markets, corporate bookings, community events and special event days.
- Liaising with event organisers regarding site requirements, trading times, setup arrangements and operational requirements.
- Managing stock control, ordering, purchasing and allocation of supplies from the warehouse to each trailer and café outlet.
- Maintaining accurate records of stock levels, sales, wastage, supplier purchases and financial transactions.
- Setting and reviewing retail prices, promotions and product presentation for café and event‑based sales.
- Implementing purchasing, marketing and promotional strategies to increase sales and improve customer engagement.
- Recruiting, training, rostering, supervising and performance‑managing retail staff, baristas and event team members.
- Allocating staff to the café and mobile trailers according to event schedules, trading hours and expected customer demand.
- Ensuring all trailers are prepared before each event, including stock, equipment, signage, display presentation and cleaning requirements.
- Monitoring retail sales performance and preparing regular reports on revenue, expenses, stock usage and operational efficiency.
- Managing budgets for supplies, staffing, event costs and retail operations.
- Ensuring compliance with food safety, occupational health and safety, local council, event‑site and retail trading requirements.
- Maintaining consistency in product quality, pricing, customer service, branding and presentation across all café and trailer outlets.
- Coordinating equipment maintenance, trailer presentation, cleaning schedules and post‑event pack‑down procedures.
- Handling customer feedback and resolving operational or service issues in a qualified manner. Skills and Experience Required The successful applicant must have:
- Previous experience managing a retail business, café, quick‑service food outlet, mobile food operation or similar customer‑facing retail environment.
- Strong experience in staff management, rostering, and training.
- Experience with stock control, ordering, supplier coordination and inventory management.
- Ability to manage multiple outlets or trading locations.
- Strong understanding of retail sales, customer service standards and financial record keeping.
- Ability to work under pressure during busy trading periods and events.
- Excellent communication, organisation and problem‑solving skills.
- Knowledge of food safety, hygiene and workplace health and safety requirements.
- Flexibility to work across weekdays, weekends, public holidays and major event days as required. Qualifications A relevant qualification in Retail Management, Business Management, Hospitality Management or a related field is preferred. Relevant practical experience in retail management, café management, quick‑service food management or mobile food retail operations will also be highly regarded. Why Join Us?
